CHEF PROFILE - DEREK WILkins
DEREK STARTED HIS CAREER AT ROUGE RESTAURANT WORKING UNDER CHEF MIKE DEKKER. IN HIS THREE-YEAR TERM, HE WORKED HIS WAY UP FROM PREP COOK TO SOUS CHEF. SINCE THEN, HE HAS WORKED IN MULTIPLE VENUES AND UNTIL RECENTLY, WAS THE CHEF DE CUISINE AT WORKSHOP.
HE HAS BEEN FORTUNATE TO WORK ALONGSIDE AND LEARN FROM SOME OF THE TOP CHEFS IN CALGARY. HE IS BRINGING HIS EXPERIENCE IN FINE DINING, HIS COMMITMENT TO SUSTAINABILITY, AND HIS USE OF HIGH QUALITY INGREDIENTS TO CREATE A UNIQUE MENU FOR THE CITY’S CULINARY SCENE.
